Mardi Gras Pancake Day Celebrations
Today is Mardi Gras, Pancake Day, Fat Tuesday, whatever you want to call it. It is a time for celebration, merriment, and of course food.
In honour of today I have searched far and wide for some simple, easy, and delicious pancake recipes. And of course the theme for these recipes is…
Recipe 1: Easy Mini Blueberry Pancakes
Prep Time: 10 Minutes
Total Time: 20 Minutes
Serves 2
Ingredients:
1 egg
¾ cup milk
1 cup flour
1 Tbsp sugar
2 tsp baking powder
½ tsp salt
1 cup blueberries
Directions:
1. Beat the egg in a large bowl and then add the milk and beat again.
2. Add the dry ingredients, and beat until smooth. Add blueberries to batter and stir.
3. Heat a lightly buttered, medium-sized frying pan on medium-high heat. Scoop about 1 Tbsp of batter at a time onto the griddle to make mini pancakes, and brown on both sides.
4. Pile them into small stacks or just serve as bites. Keep them in a heated oven until all pancakes have been made, and serve hot with maple syrup and/or butter.

Recipe 2: Cake Mix Blueberry Pancakes
Prep Time: 5 Minutes
Total Time: 72 Minutes
Serves 6
Ingredients:
1 lemon
2 (8-oz) bags frozen blueberries (about 4 cups)
1 Tbsp maple syrup, plus more for serving
1 box yellow cake mix for 2 (9-inch) rounds
1 cup sour cream
2 large eggs
Cooking spray
Confectioners' sugar, for dusting
Butter, softened, for serving
Directions:
1. Preheat the oven to 200ºF (for keeping the pancakes warm). Grate 3/4 teaspoon lemon zest and then squeeze 1 tablespoon of juice; reserve separately. Put one bag of the blueberries, the maple syrup, lemon juice and 1/4 teaspoon of the lemon zest into a small (8-inch) skillet with 1/3 cup water. Bring to a simmer over medium heat, stirring occasionally, and continue to simmer until the mixture is syrupy and thickened, 6 to 8 minutes. Remove the blueberry sauce from the heat and set aside. (You should have about 3/4 cup.)
2. Meanwhile, whisk the cake mix, sour cream, eggs, the remaining 1/2 teaspoon lemon zest and 1 cup water in a large bowl until smooth and thick.
3. Heat a large nonstick skillet over medium heat; lightly coat with cooking spray. Drop the batter by 1/4-cupfuls into the skillet, leaving 1 inch between each. Cook until bubbles rise to the top of the pancakes and they are set around the edges and lightly browned on the bottom, 5 to 7 minutes. Add about 5 blueberries to the top of each pancake and then carefully flip (the tops of the pancakes will still be a little soft). Continue to cook until lightly browned and cooked through, 5 minutes more. Transfer to a baking sheet and keep warm in the oven. Repeat with the remaining batter.
4. Top the pancakes with the blueberry sauce and a dusting of confectioners' sugar. Serve with butter and maple syrup on the side.

Recipe 3: Blueberry Pancake Bites

Total Time: 45 Minutes

Ingredients:
Nonstick cooking spray
1 cup all-purpose flour
1 Tbsp granulated pure cane sugar
1 tsp baking powder
Pinch fine sea salt
3 Tbsp unsalted butter, melted and cooled
½ tsp pure vanilla extract
1 large egg
½ cup milk, plus 1 to 2 teaspoons
Grated lemon or orange zest
½ cup fresh blueberries
1 cup confectioners' sugar
½ cup maple syrup, warmed optional
Directions:
1. Preheat the oven to 375 degrees F. Spray a doughnut hole pan liberally with nonstick spray.
2. Whisk together the flour, sugar, baking powder and salt in a medium bowl. In a second bowl, whisk the butter, vanilla and egg until smooth; then whisk in the 1/2 cup milk and the lemon zest until combined. Add the wet ingredients to the dry, and mix until a batter just comes together. Cover and let sit at room temperature for 15 minutes.
3. Fill the molds of the prepared doughnut hole pan two-thirds of the way with batter, then press a few blueberries into each. Bake until lightly golden brown, about 10 minutes. Flip and bake another 3 to 4 minutes.
4. Mix together 1/2 cup of the confectioners' sugar and the remaining 1 to 2 teaspoons milk to make a glaze. Toss some of the pancake bites in the remaining confectioners' sugar.
5. Serve drizzled with the glaze, or serve with warm maple syrup for dipping.
