Blue Velvet White Chocolate Chip Cookies

Holy rigatoni! Did you guys know this existed? I certainly didn't. Thank the Gods that I discovered this magnificent recipe or we'd really be missing out on such a delicious blue concoction with little bits of starlight sprinkled on top.

What you need (yields about 2 dozen cookies):

2 and 1/4 cups all-purpose flour

2 and 1/2 tbsp cocoa powder

3/4 tsp baking soda

1/2 tsp salt

8 tbsp (1 stick) unsalted butter

6 tbsp coconut oil

1 and 1/2 cups granulated sugar

1 large egg

1 large egg yolk

1 and 1/2 tsp white vinegar

1 and 1/2 tsp pure vanilla extract

Blue food coloring (preferably gel)

White chocolate chips

Directions!:

  1. Preheat oven to 375 degrees. Line your baking sheets with silicone baking mats; set aside.
  2. In a small bowl, combine the flour, cocoa powder, baking soda, and salt.
  3. In the bowl of an electric mixer fitted with the paddle attachment, cream together the butter, coconut oil, and sugar for 5 minutes. Add the egg, egg yolk, vinegar, and vanilla and mix for 3-5 more minutes until smooth and creamy. Add in the food coloring, a tiny bit at a time, until your desired hue is reached.
  4. Add the dry ingredients and mix on low until combined.
  5. Using a 1 and 1/2 tbsp cookie scoop (or your hands if you prefer that!), scoop cookies onto prepared baking sheets a couple inches apart. Press 8 white chocolate chips into each dough ball so that the chips get even distributed!
  6. Bake for 10-15 minutes. Remove from oven and allow to cool for a couple minutes on the baking sheets before removing and placing on a wire rack to cool completely.

...And let's just throw in one more picture because they look so goooooood! I swear, cookies were meant to be blue.

  2. Place one spoonful of the ground graham crackers into see-through cups

  3. Using an electric mixer, whip the cream cheese, sugar, cream, and vanilla together until smooth

  4. Add a squirt of violet gel coloring to the mixture and then continue to mix

  5. Continue adding drops of gel and mixing until the mixture turns a nice light blue color

  6. Pour the mixture into the cups so each one is filled about 3/4 of an inch from the top.

Let's hear from the Camp!

I had the great pleasure of catching Ms. Aimee Nightfall when she had a little bit of spare time and I got to ask her what her favorite blue thing was. I didn't limit it to food, though, because obviously, this world is full of so many things that are such a pretty blue! Here was her response:

"My favourite blue thing? Well... That must be that cocktail dress I got to wear for the New Year's party months ago. It was so shiny and gorgeous.. I wish I could just wear it every day.."

Ohhhhh and right she was! The dress is absolutely beautiful! She showed me a picture and just looks so pretty with all of the sparkles!

Soooooo much sugaaaaaar! Welp, that’s all for this week, folks. Be sure to pat yourself on the back for doing such a good job with putting yourself on a sugar high with this week’s pair of diabolical treats. Or, if you managed to burn down your kitchen or the food just turned out to be horrible, don’t sweat it! You tried something new. So, as per usual, time to dance after a job well (or burned to a crisp) done!
